    Build the dish x allergen table required in the EU (Regulation 1169/2011, Annex II: gluten, crustaceans, eggs, fish, peanuts, soybeans, milk, tree nuts, celery, mustard, sesame, sulphites, lupin, molluscs). Give each dish with the allergens it contains (English, Italian or common names like 'shrimp', 'dairy'); returns a Markdown matrix plus the dishes to avoid per allergen. It does not guess allergens from dish names.
